As parents, we all want our kids to have a healthy lunch, but we also want something our kids will actually eat. Kids love sandwiches, but they can get boring to eat day-after-day. Enter pinwheels – they are easy to make, like a sandwich, and kids love them! You can customize it to your child’s taste – turkey, ham, cheese, veggie, PB&J, and the list goes on-and-on. They are quick to put together and transport well in a lunchbox. What you need:

  • wheat wrap or tortilla
  • protein – turkey, ham, chicken, cheese, hummus, peanut butter
  • color (fruit or veggie) – bell peppers, spinach, tomatoes, banana, strawberries, jelly, pomegranate
  • optional extras – chia seeds, hemp seeds, flax seeds

Assembly:

  1. lay tortilla flat on the counter
  2. layer protein on the tortilla (if using shredded cheese – I would melt it slightly before adding other ingredients)
  3. top with colorful fruit or veggies
  4. add the optional extras
  5. roll up tortilla up and slice into pinwheels
  6. Enjoy!
