Who else loves pizza? I do! And my kids definitely love it too. Personal mini pizzas are a super fun way to get your kids excited about their lunch. Plus, you get to choose the ingredients used to create a healthy, balanced lunch. My kids like to keep it pretty simple with cheese or pepperoni pizza, but get as creative as you want with toppings! What you need:

  • pizza dough – refrigerated, frozen, or homemade (I used frozen)
  • pizza sauce – canned, refrigerated, or homemade (I used canned)
  • Shredded cheese (I  used a pizza blend)
  • Pepperoni, sausage, chicken, or any protein you prefer
  • Veggies – bell peppers, tomatoes, spinach, mushrooms, artichokes, or any veggie you prefer

Assembly:

  1. Divide dough into small rounds, and press the dough down on the pan.
  2. Put the dough in the oven to bake for 8 minutes at 375 degrees F to get the crust golden.
  3. Top the dough with pizza sauce evenly.
  4. Add shredded cheese on top of the pizza sauce.
  5. Add one or two pepperonis to the top of each pizza (or any toppings you are using).
  6. Put back in the oven and bake for an additional 8 minutes to allow the cheese to melt.
  7. Serve with a fruit and vegetable of your choice for a balanced meal!
