During the summer, I love quick and easy dinners that include fresh ingredients. Things like tacos, bruschetta, BLTs, and salads are all my go-to simple summer meals, but I am always on the lookout for new recipes to try. This Margherita Chicken recipe is the perfect delicious summer meal that requires minimal ingredients and effort. All you need is chicken breast, olive oil, seasonings, mozzarella cheese, and tomatoes to create this dish.
You can either bake or grill chicken your chicken breast. If you bake it you can pour the olive oil and seasonings on it right before baking it. If you are grilling, marinate your chicken with the olive oil and seasonings before you put the chicken on the grill to avoid olive oil dripping down into your grill. Once your chicken is almost done, you will top it with fresh mozzarella cheese and ripe tomatoes, and put back in the oven or keep on the grill for a couple of minutes to melt the cheese. The cheese and tomatoes add a fresh flavor without a lot of extra work. You can also top your chicken with fresh basil, balsamic glaze, or avocado for different flavor combinations.
This main entree is very versatile and can be paired with any side you prefer. I served mine with pasta and asiago kale salad for a well-balanced meal.
