Olive Oil (for sautéing)
2 1/2 C Red Onion
6-10 Gloves of Garlic (Chopped)
1 1/2 Tbsp Chili Powder
2 Tbsp Cumin
3-4oz Tomato Paste (1/3 of a 12oz can)
Cooked Quinoa (1 1/2 C Quinoa + 3 C Water)
3 cans of Black Beans
Taco Assembly + Toppings
Red Cabbage (marinated in Salt + Sugar + Vinegar)
1 Cup Cilantro
1/2-3/4 C Mayo
1/2-3/4 C Plain Greek Yogurt
Juice of 1 Lime
