I love the holiday season, and all that comes with it – the time with family and friends, the traditions, the decorations and the food. This delicious homemade granola would make the perfect gift for the holidays. It is simple, tasty and easy to make in big batches. I like this recipe because it is full of flavor, is nutritious and keeps me satisfied.
Homemade Granola – Recipe from Rachels Good Eats
Yield – 3 cups
Ingredients
- ½ cup walnuts
- 1/3 cup pecans
- 1/3 cup coconut flakes
- 1/3 cup pumpkin seeds
- 1/3 cup sliced almonds
- 3 tbsp flaxseeds
- 3 tbsp hemp seeds
- ¼ cup coconut oil
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1 tbsp arrowroot starch
- ½ tsp cinnamon
- Pinch of sea salt
Instructions
- Preheat your oven to 325 degrees F
- Roughly chop nuts and seeds on cutting board, or pulse in a food processor a couple times
- Add nuts and seeds to a bowl, and combine with melted coconut oil, vanilla, maple syrup, arrowroot starch, cinnamon and sea salt
- Mix all ingredients until combined, and pour mixture on a baking sheet lined with parchment paper
- Bake for 12-15 minutes, and then let cool
- Store in airtight container for freshness
