I love the holiday season, and all that comes with it – the time with family and friends, the traditions, the decorations and the food. Homemade Granola

Homemade Granola – Recipe from Rachels Good Eats

Yield – 3 cups

Ingredients

  • ½ cup walnuts
  • 1/3 cup pecans
  • 1/3 cup coconut flakes
  • 1/3 cup pumpkin seeds
  • 1/3 cup sliced almonds
  • 3 tbsp flaxseeds
  • 3 tbsp hemp seeds
  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 tbsp arrowroot starch
  • ½ tsp cinnamon
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 325 degrees F
  2. Roughly chop nuts and seeds on cutting board, or pulse in a food processor a couple times
  3. Add nuts and seeds to a bowl, and combine with melted coconut oil, vanilla, maple syrup, arrowroot starch, cinnamon and sea salt
  4. Mix all ingredients until combined, and pour mixture on a baking sheet lined with parchment paper
  5. Bake for 12-15 minutes, and then let cool
  6. Store in airtight container for freshness
