Meals that come together in minutes are some of my favorites. When that simple meal is also balanced and delicious it makes it even better! Bowls are such a simple way to get a balanced meal on the table during the and make the best leftovers for lunch the next day! I love making things like burrito bowls and stir fry bowls. Not only do they have a ton of flavor, but they are an easy way to include lots of veggies with your grain and protein for a well-rounded meal. This Carne Asada Bowl from Trader Joes is no exception. It comes together in 10 minutes making it the perfect weeknight meal that is packed with flavor and nutrients!
What you need:
- 1 package TJ’s Fully Cooked Traditional Carnitas
- 2bags TJ’s Frozen Organic Jasmine Rice
- 1 can TJ’s Organic Black Beans, rinsed and drained
- TJ’s Pico de Gallo
- TJ’s Avocado’s Number Guacamole
- TJ’s Jalapeño Sauce
- TJ’s Fresh Cilantro, sliced Jalapeno, and sliced Lime, for garnish (optional)
Assembly:
- Microwave carnitas according to package directions. Shred with forks, set aside.
- Microwave rice according to package directions. Divide among four serving bowls. Top bowls with carnitas, black beans, pico de gallo, and guacamole.
- Drizzle generously with jalapeño sauce. Garnish with fresh cilantro, sliced jalapeño, and a squeeze of lime, if using.
