Pasta is a staple in our household. Everyone loves pasta night. My kids frequently ask for ‘green pasta’ aka pesto pasta. One thing I love about pasta is that I can make it for dinner one night, and pack it for lunch the next. Pasta is so versatile! You can make regular spaghetti with marinara, chicken alfredo, spicy sausage and pepper with penne pasta, lasagna, olive oil with sundried tomato pasta, macaroni and cheese, shrimp scampi, and the list goes on-and-on.
I love veggies in my pasta, but my kids prefer to have their veggies on the side. So, we serve them separately, and then I mix them in. Feel free to individualize your pasta to your family’s preferences.
What you need:
- Cheese tortellini noodles (I used refrigerated, but you could use homemade)
- Pesto sauce (I used premade, but you could use homemade)
- Parmesan cheese
- Color (fruits and veggies – optional to add in with the pasta or serve on the side) – bell peppers, spinach, mushrooms, broccoli, zucchini, apples, oranges, grapes
Assembly:
- Bring water to a boil in a saucepan
- Add tortellini pasta and cook 4-6 minutes until they are done (tortellini will float and turn more white)
- Drain water and put on a plate. Top with pesto sauce, and mix together.
- Sprinkle parmesan cheese on top.
- Serve with bell pepper strips and an apple for a balanced meal (or mix the bell peppers in with your pasta like I do).
