I’m not sure how, but it is almost Halloween! This year more than ever, we are looking for ways to keep things fun and exciting, especially around holidays. One way to spice up the week is with a Halloween themed lunchbox! This lunchbox still contains all the things a healthy, balanced lunch would, but also contains some tricks & treats, and a whole lot of fun. The video below shows you how to create your very own spider waffles, jack-o-lantern orange, and goblin grin peapods.

What you need:

  • 1 or 2 whole-wheat toast waffle (or other frozen waffle)
  • 1Tbsp peanut butter (almond butter, cashew butter, sunflower seed butter)
  • 1, 6oz Greek yogurt
  • 6 pretzels (broken into 6 legs)
  • cutie or orange (used a marker to draw on jack-o-lantern)
  • Peapods

Assembly:

  1. toast frozen waffle until cooked
  2. spread peanut butter on the waffle
  3. break apart pretzels into 6 legs and place 3 on each side of the waffle, and add 2 chocolate chips for the eyes
  4. draw a jack-o-lantern face on the cutie
  5. place waffle, cutie, and pea pods in the lunchbox
